Description

These Air Fryer Southwest Chicken Burritos are a flavorful and easy-to-make meal featuring shredded rotisserie chicken, creamy cheese, black beans, sweet corn, and fresh pico de gallo, all wrapped in warm flour tortillas and crisped to perfection in the air fryer. Perfect for a quick weeknight dinner or a satisfying lunch, they come with a tangy sour cream and pico de gallo garnish for added freshness and zest.

Ingredients

Scale

Filling

  • 2 cups shredded rotisserie chicken
  • 1 package (8 ounces) cream cheese, room temperature
  • 1½ cups sharp cheddar cheese, shredded
  • 1 cup black beans, drained and rinsed
  • 1 can (15.25 ounces) sweet corn, drained
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 2 tablespoons taco seasoning
  • 1 cup fresh pico de gallo

Assembly

  • 6 flour tortillas, burrito size
  • Cooking spray

Garnish

  • Sour cream, for garnish
  • Pico de gallo, for garnish

Instructions

  1. Preheat the air fryer. Set your air fryer to 400°F (204°C) and allow it to preheat fully to ensure the burritos crisp up evenly.
  2. Mix the filling. In a large bowl, combine the shredded rotisserie chicken, room temperature cream cheese, shredded sharp cheddar cheese, black beans, drained sweet corn, drained diced tomatoes, taco seasoning, and fresh pico de gallo. Stir thoroughly until all ingredients are well incorporated.
  3. Assemble the burritos. Spoon approximately 1 cup of the filling mixture into the center of each flour tortilla. Fold the sides inward, then starting at the bottom, roll the tortilla tightly over the filling to secure everything inside.
  4. Prepare for air frying. Lightly spray the outside of each burrito generously with cooking spray to help achieve a crisp, golden exterior.
  5. Cook the burritos – first side. Place the burritos seam-side down in the preheated air fryer basket. Cook for 5 minutes at 400°F to start crisping and heating through.
  6. Flip and cook the other side. Carefully flip the burritos over, spray the top side again with cooking spray, and cook for an additional 5 minutes to ensure both sides are crispy and the filling is hot.
  7. Serve. Remove the burritos from the air fryer and plate them while warm. Garnish with additional pico de gallo and a dollop of sour cream for added flavor and creaminess.

Notes

  • Oven cooking alternative: Preheat your oven to 400°F and line a baking sheet with parchment paper. Assemble burritos as instructed and place on the baking sheet. Bake for 10-15 minutes or until heated through and tortillas are slightly crispy. Adjust time as needed depending on your oven.
  • The number of burritos cooked at once depends on your air fryer size; avoid overcrowding to ensure even crisping.
  • For spicier burritos, add diced jalapeños or a sprinkle of cayenne pepper to the filling.
  • Use low-fat cream cheese or cheese alternatives to reduce fat content.
  • Leftover burritos can be refrigerated and reheated in the air fryer for 3-4 minutes for best texture.
