Air Fryer Lasagna Fritta combines the classic flavors of lasagna into flavorful, crispy, bite-sized rolls that are perfect as an appetizer or snack. Rolled with a rich blend of five cheeses and Italian seasoning, breaded and air-fried to golden perfection, these fritters are served with marinara and Alfredo sauces for dipping.

  • 15 ounces Whole Milk Ricotta Cheese
  • 1/2 cup Freshly Grated Parmesan Cheese
  • 1/2 cup Freshly Grated Romano Cheese
  • 1/2 cup Freshly Grated Asiago Cheese
  • 1/2 cup Freshly Grated Mozzarella Cheese
  • 2 tablespoons Italian Seasoning
  • 2 Large Eggs

Batter

  • 1 1/2 cups Italian Bread Crumbs or Panko
  • 2 tablespoons Olive Oil
  • 1/2 cup Finely Grated Parmesan Cheese
  • 2 Large Eggs

Instructions

  1. Noodle Prep: Boil lasagna noodles according to package directions until al dente. Once cooked, drain and rinse with cold water for handling. If your noodles have ribbon edges, trim the ribbons off the sides to create smooth edges.
  2. Cheese Mixture: In a medium bowl, mix together the 2 eggs, ricotta, Parmesan, Romano, Asiago, mozzarella cheeses, and Italian seasoning until well combined.
  3. Assemble Rolls: Lay cooked lasagna noodles flat. Spread an even layer of cheese mixture over each noodle. Roll each noodle into roughly 2-3 inch lengths, securing the cheese inside.
  4. Freeze Rolls: Place the rolled noodles in a container lined with parchment or wax paper to prevent sticking. Freeze for 1 to 2 hours until firm enough to handle.
  5. Prepare Batter: In a shallow dish, scramble 2 eggs. In a microwave-safe bowl, combine the bread crumbs and olive oil. Microwave in 30-second intervals stirring in between until the crumbs turn golden brown (about 1-2 minutes). Let cool, then mix in ½ cup grated Parmesan.
  6. Bread Rolls: Dip each frozen roll first in the egg, then coat with the bread crumb mixture. Shake off any excess in between dips to ensure even coating.
  7. Air Frying: Spray the air fryer basket lightly with olive oil spray. Arrange the breaded rolls in the basket without overcrowding. Lightly spray the tops with oil as well. Set the air fryer to 400°F and cook for 8 minutes. Flip the rolls carefully and cook for an additional 6-8 minutes until crispy and golden brown. If they look dry during cooking, lightly spray with more oil. Remove and serve immediately with marinara and/or Alfredo sauce.
  8. Pan Frying (Alternative Method): Heat canola oil in a pan over medium-high heat until hot. Carefully add the breaded rolls and fry for about 2 minutes on each side until golden brown and crispy. Drain on paper towels and serve with sauces.
