Corn Ribs:
- 3 ears of fresh corn
- 2 tablespoons olive oil
- 2 teaspoons taco seasoning
Sauce:
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- 1–2 limes
Toppings:
- 1/3 cup cotija cheese
- 1/3 cup chopped cilantro
Instructions
- Prepare the Corn: Remove husks and silk, wash, and dry. Microwave for 2 minutes, then cool for 5 minutes.
- Cut Corn: Trim ends, cut in half, and then cut into riblets.
- Season: Mix olive oil and 1 tbsp taco seasoning, brush onto riblets.
- Air Fry: Air fry at 385°F for 10-12 minutes.
- Make Sauce: Combine sour cream, mayonnaise, taco seasoning, and lime juice.
- Assemble: Sprinkle cotija cheese, lime juice, and sauce over cooked riblets.
