Description

These Air Fryer Elote Corn Ribs are a delicious twist on traditional elote, with all the flavors you love in a fun-to-eat riblet form. Perfectly seasoned and cooked to crispy perfection in the air fryer, they are a must-try for corn lovers!


Ingredients

Corn Ribs:

  • 3 ears of fresh corn
  • 2 tablespoons olive oil
  • 2 teaspoons taco seasoning

Sauce:

  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 12 limes

Toppings:

  • 1/3 cup cotija cheese
  • 1/3 cup chopped cilantro

Instructions

  1. Prepare the Corn: Remove husks and silk, wash, and dry. Microwave for 2 minutes, then cool for 5 minutes.
  2. Cut Corn: Trim ends, cut in half, and then cut into riblets.
  3. Season: Mix olive oil and 1 tbsp taco seasoning, brush onto riblets.
  4. Air Fry: Air fry at 385°F for 10-12 minutes.
  5. Make Sauce: Combine sour cream, mayonnaise, taco seasoning, and lime juice.
  6. Assemble: Sprinkle cotija cheese, lime juice, and sauce over cooked riblets.
