Almond Flour Filling:
- 3/4 cup almond flour
White Chocolate Coating:
- 1 cup white chocolate chips (sub dairy-free as needed)
- 2 tsp coconut oil (can substitute canola, vegetable, or avocado oil)
Instructions
- Graham Cracker Filling: In a food processor, process graham crackers until finely crushed. There should be no large chunks visible.
- Strawberry Filling: Add in strawberries and pulse until finely diced, ensuring small pieces remain.
- Almond Flour Filling: Mix in almond flour to complete the filling.
- Forming Balls: Scoop the filling onto wax paper to make about 16 balls. Freeze for 20-30 minutes to harden.
- White Chocolate Coating: Melt white chocolate chips and coconut oil together in a microwave-safe bowl. Dip each ball into the melted chocolate and place back on the sheet. Optional to top with crushed graham crackers.
- Final Touch: Freeze for 5 minutes to allow the chocolate to harden. Enjoy chilled from the refrigerator.
