For the Veggies:
- 1 large red bell pepper – cut into 1-inch pieces
- 1 large orange bell pepper – cut into 1-inch pieces
- 1 red onion – peeled and cut into 1-inch pieces
- 1 medium zucchini – cut into 1-inch pieces
- 1 tablespoon avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- pinch of black pepper
For the Chicken Sausage:
- 1 package chicken sausage (12 oz) – I used a robust Italian flavor
Instructions
- Prepare the Veggies: Chop the veggies and add them to a large bowl. Drizzle with avocado oil and toss with spices.
- Season the Veggies: Mix garlic powder, onion powder, Italian seasoning, salt, and pepper. Coat the veggies with the spice blend.
- Prepare the Chicken Sausage: Slice the sausage into rounds and add to the veggie bowl.
- Cook in Air Fryer: Preheat air fryer to 390°F. Spray basket with cooking spray. Cook veggies and sausage for 10 minutes, flipping halfway.
- Serve: Once cooked, serve the chicken sausage and veggies as is or with rice.
